Chicken Quinoa Recipe

1          teaspoon sea salt
4          organic, free-range chicken breasts
2          tablespoons coconut oil
½        cup onion, diced
2          cloves garlic, minced
1          cup white wine
½        cup spinach or Swiss chard, chopped
5          cups chopped tomatoes

Servings: 4-6

Prep:  10 minutes        Cook:  60 minutes

Season the chicken with sea salt.  Heat coconut oil over medium-high heat and then brown the chicken on both sides.  Set chicken aside.  Sauté the onions and garlic until soft.  Add chicken and white wine and simmer for 10 minutes.  Add spinach or Swiss chard and tomatoes.  Simmer for 35-40 minutes.  Serve over quinoa (see preparation below).  Optional:  Top with chopped black olives and/or parmesan cheese.

 

Quinoa Preparation

2          cups quinoa
3          cups filtered water
2          tablespoons butter
1          teaspoon sea salt

While chicken is simmering, rinse the quinoa.  Put quinoa in filtered water and bring to a boil.  Add butter and sea salt, reduce to simmer and cover for 10-15 minutes or until water is absorbed.  Note:  Quinoa is easier to digest if you soak it overnight in water and 2 tablespoons lemon juice prior to cooking.  Rinse quinoa after soaking and cook as recipe describes.
